This recipe for avocado egg salad is easy to make and the perfect quick lunch recipe. It is the perfect balance of hard boiled eggs and avocado mixed together. The perfect lunch to add on top of a couple slices of toast. Prepare hard boiled eggs in advance and this can easily be thrown together in as little as 5 minutes. You’ll definitely be wanting to add this avocado egg salad to your weekly lunch rotation.

What You’ll Need for This Recipe for Avocado Egg Salad

  • Hard boiled eggs – Prepping these in advance can make this recipe much quicker to make.
  • Avocado – Make sure the avocado is ripe, so you’ll be able to easily mash it together with the hard boiled eggs.
  • Slices of toast – This is optional. I like to scoop the avocado egg salad onto 2 slices of toast, but it can easily be served without it.
  • Everything seasoning – To add on top because lets be real every savory snack is better with everything seasoning especially when it involves avocado.

How to Make an Egg and Avocado Salad

This recipe is really quite simple to make. It’s combining eggs and avocado to make a delicious easy lunch. You’ll first need to hard boil some eggs. I use 3 hard boiled eggs to make 2 servings of this recipe. Add 3 hard boiled eggs to a medium size bowl. Next, dice an avocado and add the diced avocado into the bowl with the eggs. Mash the avocado and hard boiled eggs together using a fork or potato masher. Mix the avocado and eggs together well. Scoop the avocado egg salad onto slices of toast. Spread the egg and avocado salad on the toast and top with everything seasoning.

Helpful tips for making this avocado egg salad recipe

  • Prepare several hard boiled eggs in advance to easily be able to make this recipe as a quick breakfast, lunch, or snack. Having hard boiled eggs prepared is great for several recipes.
  • Using a potato masher is a great way to mash both the avocado and eggs together.
  • If you’re not familiar with hard boiling eggs start by filling a large pot with water and gently place eggs in the water. Place the pot over medium heat and allow the water to come to a boil. Let the eggs boil for about 10 minutes and then turn off the heat. Allow the pot to sit on the hot burner and simmer for an additional 10 minutes. Next, carefully remove the pot from the burner and transfer the eggs into a bowl of ice cold water. Allow them to be in the bowl for about 5 minutes. Then, crack the egg and peel the shell off. Your eggs should be hard boiled with the yolks fully cooked inside.
