Banana Coconut Cookies
Calling all cookie lovers!!! These banana coconut cookies require ZERO flour, NO added sugar, and NO eggs – wait what? I know I have your attention now right?!? I mean who wouldn’t want to hear about a delicious cookie recipe that only uses 4 ingredients. These cookies combine banana, coconut, granola and walnuts. They’re quick to make and incredibly tasty. We may or may not have finished a whole batch in less than 24 hours (no shame).

Ingredients you will need:
- 2 bananas
- 1 1/2 cups of shredded coconut
- 1/2 cup of honey granola
- 1/4 cup of chopped walnuts
- 1 tsp of coconut oil (For coating the pan – substitute oil of your preference)
- Optional: Top with chocolate chips
Begin with preheating the oven to 350 degrees. In a medium sized mixing bowl, combine 2 bananas, 1 1/2 cups of shredded coconut, 1/2 cup of honey granola, and 1/4 cup of chopped walnuts. Start mixing all the ingredients in the bowl together by mashing the bananas and mixing the ingredients well.
Line a baking sheet with a piece of parchment paper. Next, coat the baking sheet with 1 tsp. of coconut oil or oil of your choosing. Using a spoon, scoop the banana coconut cookie dough onto the baking sheet to form one inch balls. The dough will yield approximately 10-12 balls of dough. Press the balls of dough down flat onto the cookie sheet and place them into the oven. Bake the cookies for approximately 15-18 minutes until the coconut becomes golden brown.
Once the coconut has become golden brown remove them from the oven. Set 2-3 chocolate chips into each cookie right after they are out of the oven if desired. Serve the cookies or store them for later. These make a delicious snack to have throughout the week.
