Burrito Bowl

Anything that can be topped with guac. is good right??? This burrito bowl is fairly simple to make and has lots of flavor! It combines shredded chicken, black beans, red bell peppers, and white onions for a delicious combination. You could easily add additional ingredients or switch up the vegetables if you’d prefer. This burrito bowl would also be delicious with cheese, corn, cucumbers, tomatoes, or lettuce. It has the possibility for a lot of variety making it a great meal prep recipe, because you can switch up the vegetables a little bit to change things up. The ingredients below yield for two servings, but this recipe can easily be doubled to make extra for leftovers or to meal prep for the week.

Ingredients you will need:

  • 1 lb. of chicken breast
  • 1 cup of jasmine rice
  • 1/2 cup of drained black beans
  • 1/2 cup of diced red bell peppers
  • 1/4 cup of diced white onions
  • 2 tbsp. of avocado oil (can substitute with olive oil)
  • 1/4 cup of salsa
  • 2 tbsp. of cumin
  • 1 tbsp. of ground pepper
  • Optional:
    • Top with simple guacamole (recipe linked here)

Begin by preheating the oven to 350 degrees. Then coat a baking sheet with 1 tbsp. of avocado oil (or substitute for a different oil if preferred). Set one pound of chicken breasts onto a baking sheet and put into the oven for approximately 20-30 minutes. The cooking time may vary depending on how thick the chicken breasts are, so be sure the chicken breasts are fully cooked before removing them from the oven.

While the chicken is cooking in the oven, start cooking 1 cup of jasmine rice according to the packaging. You could substitute the jasmine rice with brown rice, yellow rice, or another rice if you prefer. While the rice is cooking begin chopping up the vegetables. You’ll need to dice 1/2 cup of red bell pepper and 1/4 cup of white onion. The white onion could be substituted with a red onion if desired. Then in a small pan, add 1 tbsp. of avocado oil (or preferred oil) and cook the 1/2 cup of diced red bell peppers, 1/2 cup of drained black beans, and 1/4 cup of diced white onions. Cook the peppers, beans, and white onion oven medium heat for about 5-10 minutes.

Once the chicken is fully cooked remove it from the oven. Begin to pull/shred the chicken breast. This can be done on the baking sheet or in a medium sized mixing bowl, whichever you prefer. If you pulled the chicken on the baking sheet place the shredded chicken into a medium sized mixing bowl. Add 2 tbsp. of cumin, 1 tbsp. of ground pepper, and 1/4 cup of salsa to the shredded chicken. I just used a store bought salsa, but you could use homemade salsa if you prefer. Mix all the ingredients in the bowl of shredded chicken together well.

Pour the 1 cup of cooked rice into the bowl of shredded chicken and stir. Add in the 1/2 cup of cooked red bell pepper, 1/2 cup of drained black beans and 1/4 cup of cooked white onion. Stir all the ingredients in the bowl together. You can serve the burrito bowl as is or top with cheese, or guacamole if desired. My simple guacamole recipe is linked here.

  • 2 tbsp cumin
  • 1 tbsp ground pepper

Instructions
 

  • Preheat the oven to 350 degrees.

  • Pour the 1 cup of cooked rice into the bowl of shredded chicken and stir together. Add in the 1/2 cup of cooked red bell pepper, 1/2 cup of drained black beans and 1/4 cup of cooked white onion.
  • Stir all the ingredients in the bowl together. Serve the burrito bowl as is or top with cheese and/or guacamole if desired.
