Cinnamon Roll Protein Waffles

If you’re anything like me maybe you grew up eating the fluffy cut & back cinnamon rolls on special occasions. My family had a tradition of making them on Christmas morning every year. We always looked forward to waking up to cinnamon rolls to enjoy while we opened gifts on Christmas morning. While reminiscing on that tradition, I decided to combine two of my favorite classic breakfast items to make cinnamon roll protein waffles. They’re pretty easy to make and take very like time. The cinnamon swirl on top of the batter is everything!!

Ingredients you’ll need:

Waffles

  • 1 cup of whole wheat flour
  • 1 tbsp. of ground cinnamon
  • 1 1/2 scoops of vanilla protein powder (I used Ancient Nutrition)
  • 2 eggs
  • 1/2 cup of water

Cinnamon Swirl

  • 2 tbsp. of coconut oil – melted
  • 1 tbsp. of honey
  • 2 tbsp. of ground cinnamon
  • 2-3 tbsp. of waffle flour mix (made with ingredients above)

Begin by making the flour waffle mix. In a medium bowl, add 1 cup of whole wheat flour, 1 tbsp. of ground cinnamon, and 1 1/2 scoops of vanilla protein powder. Stir this mixture together. Put this bowl off to the side. Be sure not to add the eggs or water to this mixture yet. You will need just the dry ingredient mixture for the cinnamon swirl mix.

In a separate small bowl, start mixing together the cinnamon swirl mixture. Add 2 tbsp. of melted coconut oil, 1 tbsp. of honey, and 2 tbsp. of ground cinnamon. Mix all these ingredients together and then add 2-3 tbsps. of the waffle flour mix that you put aside in the medium mixing bowl. The waffle flour mix is meant to help thicken the cinnamon swirl mixture. After all this is mixed together set aside the cinnamon swirl mixture.

Now it is time to add the eggs and water to the waffle flour mix in the medium sized mixing bowl you had set off to the side. Add 2 eggs and 1/2 cup of water to the waffle flour mix and stir all the ingredients together well. After all the ingredients are mixed together well it is time to start making the waffles. Heat up the waffle iron and spray with a nonstick oil spray. I used coconut oil. Next, pour a thin layer of the waffle mix onto the waffle iron and then pour a spiral swirl of the cinnamon swirl mixture over the waffle mix before closing the waffle iron. Close the waffle iron and allow the waffle to fully cook. Once the waffle is done cooking remove it from the waffle iron. Repeat these steps until all the waffle mix is used. Serve the cinnamon roll protein waffles with maple syrup if desired and enjoy!
