Creamy Mashed Potatoes

These creamy mashed potatoes are dairy-free and so tasty! If you love a nice bowl of creamy garlic mashed potatoes then this recipe is for you. The vegan butter can definitely be substituted for regular butter if you don’t need them to be dairy-free. I love the simplicity of this recipe. It allows these potatoes to be used as a simple side dish or to create other recipes. These mashed potatoes can be used to make different dinner bakes or even a delicious Shepherd’s Pie.

Ingredients:

  • 3 russet potatoes
  • 1/2 cup of unsweetened almond milk
  • 1 shallot of garlic
  • 1 tbsp of vegan butter
  • 1 teaspoon of ground parsley
  • 1 teaspoon of ground pepper
  • 1/2 teaspoon of sea salt

Directions:

  1. Begin by peeling the skin off of the 3 russet potatoes.
  2. Add water to a large saucepan and place over the stove on medium heat.
  3. Bring the water to a boil and place the 3 russet potatoes into the water.
  4. Allow the potatoes to boil for about 20-30 minutes until they start to become soft.
  5. While the potatoes are boiling begin to roast the shallot of garlic. Place the shallot onto a cookie sheet and roast in the oven for about 5 minutes on 350 degrees, then remove from the oven.
  6. Once the potatoes are soft, drain the water from the saucepan, and place the 3 russet potatoes into a large mixing bowl.
  7. Using a whisk begin to mash the potatoes.
  8. Add the 1/2 cup of unsweetened almond milk into the large mixing bowl. Mix the almond milk and potatoes together.
  9. Combine the shallot of garlic, 1 tablespoon of vegan butter, 1 teaspoon of ground parsley, 1 teaspoon of ground pepper, and 1/2 teaspoon of sea salt.
  10. Mix all the ingredients in the bowl until the mashed potatoes are a soft creamy texture. Serve and enjoy!
