This delicious and simple shrimp appetizer is perfect for your next potluck, family gathering, or girls night in. It’s a staple in our house for dinner almost every week and is always a big hit when we serve it for others. The combination of cucumber and mango make it so refreshing on a hot summer day. Serve this up with some cocktails for a snack pool side or a outdoor summer BBQ. If it’s cooler this still goes perfectly with a football cookout or Super Bowl Party. Regardless of the occasion this dish will be loved and is a great staple for an easy hosting recipe.
This delicious and simple shrimp appetizer combines shrimp, cucumber, mango, avocado, lime juice, salt and pepper. All these ingredients get mixed together and then it’s ready to serve. The best part is it only takes 5-10 minutes to prep and make. It’s also extremely easy to double or even triple the recipe depending on the number of people you are hosting. We typically serve this with crackers for a party, but if we are making it at home for dinner we’ll eat it by itself. It also makes an amazing side for fish tacos or you can even top the fish tacos with this and you won’t be disappointed.
What you’ll need:
- 1/2 lb. cooked, peeled, de-veined, and tail off shrimp (I use frozen and just unthaw)
- 1 mango
- 2 limes
- 1 cucumber
- 1 avocado
- 1 tbsp. olive oil
- 1/2 red onion
- Crackers (optional)
How to Make It
To make this delicious and simple shrimp appetizer unthaw the shrimp if you bought frozen. Make sure they are peeled, de-veined, and the tails are off. Then you will dice 1 mango, 1 peeled cucumber, 1/2 red onion and 1 avocado. Add all of that to a large mixing bowl. Next dice up the shrimp and add that to the mixing bowl. Add in 1 tbsp. of olive oil, 1 tsp. of salt, and 1 tsp. of pepper. Then cut a lime in half and squeeze 1 lime into the mixture. Mix everything together. Taste to see if it needs more lime, salt or pepper. This varies on personal preference and how juicy the limes are. Once the flavor is to your likely serve with crackers or store in the fridge until you are ready to serve.
