Easy Teriyaki Chicken Bowl

Teriyaki chicken is one of my favorite ways to make chicken. You might be thinking of that food court or take out teriyaki chicken, but I made this easy teriyaki chicken bowl at home. It was a perfect simple dinner recipe after a long work day. I included jasmine rice, mixed greens, broccoli and teriyaki chicken. I topped the chicken with some sesame seeds to add a little extra crunch. You could definitely do without the sesame seeds if you prefer. I love that this easy teriyaki chicken bowl can be quite versatile too. The chicken could easily be made with different sides. You could add it to a stir fry, pot stickers, and much more.

Ingredients you will need:

  • 2 chicken breasts
  • 1/4 cup of teriyaki sauce
  • 1 cup of jasmine rice
  • 1/2 cup of mixed greens
  • 1 cup of broccoli
  • 2 tsp. of ginger
  • 1 tsp. of garlic powder
  • 2 tbsp. of sesame seeds

Begin by preheating the oven to 350 degrees. Place the 2 chicken breasts into a baking pan. I used a square baking/cake pan to avoid getting the teriyaki sauce everywhere. Top the 2 chicken breasts with 2 tsp. of ginger, 1 tsp. of garlic powder, and 1/4 cup of teriyaki sauce. Cook the chicken in the oven for about 20-25 minutes or until fully cooked.

While the chicken breast are in the oven start cooking the jasmine rice and broccoli. Follow the directions on the packaging for cooking instructions. You could easily use frozen or steam-in-bag broccoli for a quick option too.

Once the chicken is fully cooked then it is time to assemble these easy teriyaki chicken bowls. Into 2 bowls place 1/2 cup of jasmine rice, 1/4 cup of mixed greens, 1/2 cup of broccoli, and 1 chicken breast chopped up. Top the chicken in each bowl with 1 tbsp. of sesame seeds and enjoy.

  • Cook the chicken in the oven for about 20-25 minutes or until fully cooked.
  • Start cooking the jasmine rice and broccoli while the chicken breasts are in the oven. Follow the directions on the packaging. For easiest results frozen rice/broccoli or steam in the bag can be used.
  • Once the chicken is fully cooked remove from the oven. Serve with 1/2 cup of jasmine rice, 1/4 cup of mixed greens, 1/2 cup of broccoli, 1 chicken breast on top, 1 tbsp. of sesame seeds and enjoy!
