Fall Sweet Potato Shepherd’s Pie

Sweet potatoes are one of my favorite items to include in fall recipes. I start thinking about sweet potato mash or sweet potato casserole on Thanksgiving instantly. I decided to put a little spin on the classic shepherd’s pie to replace russet potatoes with sweet potatoes. The husband thought it sounded weird at first, but he actually loved it! You know it’s good when it gets the husband approval. This fall sweet potato shepherd’s pie combines sweet potatoes, ground turkey breast, green beans, onions, and zucchini. I think it’s safe to say this recipe is probably going to quickly become a fall staple in our household.

Ingredients you’ll need:

  • 1 lb. of ground turkey breast
  • 2 large sweet potatoes
  • 1 zucchini
  • 10 ounces of green beans
  • 17 ounces of chicken bone broth
  • 1 cup of unsweetened almond milk
  • 1 tbsp. of dairy free butter
  • 1/4 cup of chopped green onion
  • 2 tbsp. of parsley
  • 1 tbsp. of fresh or minced garlic
  • 1 tbsp. of pepper
  • 1 tsp. of salt

Begin by boiling a large pot of water over medium heat. Peel the sweet potatoes and then chop them. The sweet potatoes should be cut into large pieces. Then place them into the pot of boiling water. While the sweet potatoes are boiling you can start chopping the other vegetables and cooking the ground turkey. Start by chopping the zucchini into about 1 inch spears. Also, chop the green beans so they are about 1 inch. Next, begin cooking the ground turkey in a cast iron skillet or pan. Once the ground turkey is fully cooked then add in the green beans and zucchini to begin cooking those down.

Once the sweet potatoes are done boiling place them into a large mixing bowl. Add a 1/2 cup of unsweetened almond milk and 1 tbsp. of dairy free butter. Then begin to mash the sweet potatoes and mixing. Continue doing this until the sweet potatoes are a fluffy creamy consistency. You may need to add in some more almond milk as you are making the mashed sweet potatoes. It typically takes about 3/4 of a cup, but I recommend starting with 1/2 a cup and then add more as it’s needed. After the sweet potatoes are fully mashed set that bowl off to the side.

The ground turkey, green beans, and zucchini should all be cooked down now. Chop about 1/4 chop of green onions then add half to the meat and vegetable pan and half to the mashed sweet potatoes. Mix the green onions into both mixtures. Add 1 tbsp. of fresh or minced garlic, 2 tbsp. of parsley, 1 tbsp. of pepper, and 1 tsp. of salt to the turkey and vegetable pan. Mix all the seasoning into the mixture. If you used a cast iron skillet then leave everything in it. If you used a regular pan then transfer the ground turkey and vegetables into an oven safe pan. Then you will pour the 17 ounces of chicken bone broth over the ground turkey and vegetables. Next you will layer the sweet potatoes over the top of the ground turkey and vegetable mixture. Place the pan into the oven for about 45 minutes on 350 degrees. When the sweet potato shepherd’s pie is completely done remove it from the oven and enjoy!
