Green Goddess Pasta Salad

It is starting to warm up in Florida which is making me ready for all the spring/summer refreshing foods. I love a good pasta salad at the beach, poolside, or just for a weekday lunch. This pasta salad includes Trader Joe’s Green Goddess dressing. If you’ve never had it is amazing for pasta salads or really any salad honestly. It is vegan and basically just avocados, green onions, lemon juice, chives, basil, and garlic. You could definitely make this pasta salad with another dressing if you don’t go to Trader Joe’s or don’t have access to one nearby though. You could easily make this pasta salad with a balsamic dressing or Italian dressing as well.

To make this green goddess pasta salad I used brown rice pasta, shredded carrots, diced cucumbers, shredded chicken, and the green goddess salad dressing. It might seem simple with just these 5 simple ingredients but it is delicious. This pasta salad would make a great addition to bring to a BBQ or even for your weekly meal prep.

Ingredients You Will Need:

  • 2 cups of brown rice pasta
  • 1 lb. of chicken breast
  • 1 cup of shredded carrots
  • 1-2 cucumbers (diced)
  • 1 bottle of Trader Joe’s Green Goddess Dressing
  • 1 tsp. of garlic powder

Begin by boiling water in a medium sized saucepan over medium heat. Once the water comes to a boil add in the 2 cups of brown rice pasta. While the pasta is cooking start cooking the chicken breast. Put the 1 lb. of chicken breast into an oven safe pan. Season the chicken breast with 1 tsp. of garlic powder. Then place the chicken breast into the oven at 350 degrees for about 20-30 minutes or until fully cooked. Once the pasta and chicken are fully cooked remove both from the oven/heat.

Dice the 1-2 cucumbers. Place the 1 cup of shredded carrots and 1-2 diced cucumbers into a large bowl. Strain all the water and rinse the pasta. Once all the water is out from the pasta pour the brown rice pasta into the bowl with the cucumbers and carrots. Next, place the chicken breast into a separate bowl. Begin shredding the chicken breast in the separate bowl. I typically do this by just using 2 forks and pulling the chicken breasts apart until all of it is shredded. If you have a mixing bowl that allows you to shred chicken you could use that as well. Once all the chicken is shredded add the chicken into the bowl with the brown rice pasta, cucumbers, and shredded carrots. Lastly, pour about 3/4 a bottle of Trader Joe’s green goddess dressing into the bowl. If you are using a different dressing this will be about 8 ounces of dressing. Once the dressing is in the bowl stir everything together well, serve, and enjoy!
