Honey Coconut Granola Bars

These delicious and easy homemade honey coconut granola bars make the perfect snack. The full recipe makes approximately 6-8 granola bars, so they’re perfect to prep on the weekend to have during the work week or to have during the week for the kids. They make a great after school snack, snack during a busy work day, or even a sweet treat for your lunchbox. The combination of honey, coconut, and chocolate in these granola bars makes them sweet to help satisfy that sweet tooth you might have. I’m sure the kids would enjoy the sweet combination of honey and chocolate in these granola bars too.

Items You Will Need:

  • 2 cups of cinnamon or honey granola
  • 1/4 cup of chopped walnuts
  • 1/4 cup of honey
  • 2 tbsp. of pure maple syrup
  • 4 tbsp. of unsweetened coconut shreds or flakes
  • 2 tbsp. of chocolate chips

To make these delicious granola bars begin by combining 2 cups of granola, 1/4 cup of chopped walnuts, 1/4 cup of honey, and 2 tbsp. of pure maple syrup into a medium sized mixing bowl. Stir the ingredients together well. Once the ingredients have been stirred add in 4 tbsp. of unsweetened coconut shreds or flakes and 2 tbsp. of dark chocolate chips. Mix everything together well.

Preheat the oven to 350 degrees and line a baking pan with a sheet of parchment paper. Lay the granola onto the baking pan and spread it across the baking pan while keeping the granola the desired thickness for the bars. The thickness of the bars will depend on how thin or thick you spread the granola in the pan. Place the baking pan into the over for 30 minutes. Remove the bars from the oven and refrigerate for 2 hours. After 2 hours, remove them from the refrigerator and slice them into bars. Store the bars in the refrigerator and enjoy for a sweet snack.
