Walnut Melon Shrimp
This Walnut Melon Shrimp recipe is the perfect sweet seafood dish. The recipe combines shrimp, honeydew, cantaloupe, walnuts, soy sauce, and honey. I enjoy serving it over a bed of rice with a side of vegetables for a tasty dinner. We have made this walnut melon shrimp with just honeydew and it is equally as good. The honeydew, shrimp and walnut combination is really the key to this dish. It’s one of our household favorite recipes.

Ingredients you will need:
- 1 lb. of shrimp (fresh or frozen)
- 1/4 cup of chopped walnuts
- 1 cup of chopped honeydew
- 1 cup of chopped cantaloupe
- 1/8 cup of soy sauce (can be substituted with a soy free teriyaki if needed)
- 2 tbsp. of honey
- 1 tsp. of garlic powder
- 2 tsp, of ground ginger
- 1 tsp. of ground pepper
- 1 cup of brown rice or jasmine rice
- 2 tbsp. of sesame seeds
Begin by peeling, de-veining, and removing the tails from the shrimp if necessary. Then place 1 lb. of shrimp over medium heat in a medium sized pan. Add 1/8 cup of soy sauce, 2 tbsp. of honey, 1 tsp. of garlic powder, 1 tsp. of ground pepper, and 2 tsp. of ground ginger to the shrimp. While the shrimp is cooking begin boiling a pot of water and cook the 1 cup of rice according to the packaging.
Once the shrimp are fully cooked, add 1 cup of honeydew, 1 cup of cantaloupe, and 1/4 cup of walnuts to the shrimp. Allow the shrimp and melon to cook for about 2-3 minutes. Be sure to cook everything together just long enough to get the melon slightly warm and mixed with the sauce. If the melon is over cooked it becomes mushy. Remove the shrimp and melon from the heat. Once the rice is done cooking, place 1/2 cup of rice into each bowl and top with the melon shrimp. Sprinkle 1 tbsp. of sesame seeds on top of each bowl and enjoy!
