Mini Apple Pie Cups

Typically the only time we enjoy apple pie might be around the holidays. These mini apple pie cups make the perfect small dessert for when you are wanting something sweet, but don’t want the whole pie around the house for days lol. These are also perfect for parties, potlucks, or any social gathering because they are the perfect size for a small dessert “finger food”.

The mini apple pie cups have a soft flaky crust that gets pressed down into a muffin pan. The pie crust is then filled with a sweet apple filling to make a delicious sweet treat. We will definitely be adding these to our holiday food menu towards the end of the year.

Ingredients you’ll need:

  • 1/2 cup wheat flour
  • 1 tbsp. of cane sugar
  • 3 tbsp. of soften butter (vegan butter can be substituted if needed)
  • 1 tsp. of water (add more as needed)
  • 1 red apple
  • 1 1/2 tsp of honey
  • 1/2 tsp of maple syrup
  • 1 tsp of cinnamon
  • 1 tbsp of coconut sugar
  • 1 1/2 tbsp of honey granola

Begin with making the pie crust by combining 1/2 cup of wheat flour, 1 tbsp. of cane sugar, and 3 tbsp. of softened butter into a medium sized mixing bowl. Stir the ingredients together well and add in 1 tsp. of water. Be sure all the ingredients are mixing well. Add more water if needed to mix all ingredients well to make a ball of dough. Form the dough into a ball and let it sit for 5 minutes. After the dough has sat for 5 minutes roll out the dough to about 1/4 of an inch thick. You will likely want to place some flour down before rolling out the dough to avoid it sticking to the surface. Cut the dough into about 4 inch circles. This can be done by pressing the top of a round coffee cup or a 1 cup measuring cup into the dough. Grease a muffin pan with cooking spray (I used coconut oil spray) and then set the cut dough circles into a cup on the muffin pan. Press the circle of dough into the sides and bottom of the muffin pan to form a cup. Repeat this until all the dough has been used. The dough can be rolled back into a ball and rolled back out repeated to form more circles.

To start making the apple filling you will need to peel the red apple and then dice it into small pieces. Place the apple pieces into a medium sized sauce pan and begin cooking the over low to medium heat. Add 1 1/2 tsp. of honey, 1/2 tsp. of maple syrup, 1 tsp. of cinnamon, 1 tbsp. of coconut sugar, and 1 1/2 tbsp. of honey granola into the saucepan. Stir the ingredients for about 5-7 minutes until the apples start to become a little soft. The honey granola could be substituted with a different granola if desired. Once the apples are slightly soft remove them from the heat. Scoop the apple filling into the pie crust cups that are in the muffin pan. Evenly scoop and distribute the apple filling among the pie crusts. Preheat the oven to 350 degrees and place the mini apple pie cups in the oven for 15-20 minutes until they are golden brown.

Remove the mini apple pie cups from the oven once they are golden brown and fully cooked. The recipe yields for about 5-6 mini apple pie cups making it perfect for a simple dessert one evening. The recipe can easily be multiplied if you are making them for an event or social gathering.

Ingredients
  

  • 1/2 cup wheat flour
  • 1 tbsp cane sugar
  • 3 tbsp softened butter vegan butter can be used to make dairy-free
  • 1 tsp water
  • 1 red apple
  • 1 1/2 tsp honey
  • 1/2 tsp maple syrup
  • 1 tsp ground cinnamon
  • 1 tbsp coconut sugar
  • 1 1/2 tbsp honey granola

Instructions
 

  • Combine 1/2 cup of wheat flour, 1 tbsp. of cane sugar, and 3 tbsp. of softened butter into a medium sized mixing bowl. Stir the ingredients together well and add in 1 tsp. of water. (Add more water if needed. The mixture should be mixed well and form a ball of dough).
  • Form the dough into a ball and let is sit for 5 minutes. After the dough has sat for 5 minutes roll out the dough to about 1/4 of an inch thick.
  • Cut the dough into about 4 inch circles. This can be done by pressing the top of a round coffee cup or a 1 cup measuring cup into the dough.
  • Grease a muffin pan with cooking spray. I used coconut oil spray. Then set the cut dough circles into a cup on the muffin pan. Press the circle of dough into the sides and bottom of the muffin pan to form a cup. Repeat this until all the dough has been used.
  • Peel and dice the red apple into small pieces.
  • Place the apple pieces into a medium sized sauce pan and begin cooking them over low to medium heat.
  • Add 1 1/2 tsp. of honey, 1/2 tsp. of maple syrup, 1 tsp. of cinnamon, 1 tbsp. of coconut sugar, and 1 1/2 tbsp. of honey granola into the saucepan. Stir the ingredient for about 5-7 minutes until the apples start to become a little soft.
  • Once the apples are slightly soft remove them from the heat.
  • Scoop the apple filling into the pie crust cups that are in the muffin pan. Evenly scoop and distribute the apple filling among the pie crusts.
  • Preheat the oven to 350 degrees and place the mini apple pie cups into the oven for about 15-20 minutes or until golden brown. Remove from the oven and enjoy.
