Sausage and Rice Skillet
This sausage and rice dish is a great recipe for an easy flavorful dinner. It’s takes about 20 minutes and requires minimal work making it a great recipe after a busy work day. This recipe combines jasmine rice, chicken sausage, red peppers, onions, and spices to make the perfect meal. I used a garlic chicken sausage to add a little extra flavor, but any savory chicken sausage can be used for this dish. Feel free to get creative and even add a little cheese on top of this dish if desired.

Ingredients you’ll need:
- 2 cups of jasmine rice (can substitute with brown rice)
- 5 links of chicken sausage
- 1 red bell pepper
- 1/4 yellow onion
- 1 tbsp. of avocado oil (or desired oil)
- 3 tbsp. of tomato sauce
- 1 tsp. of ground pepper
- 1 tsp. of parsley
- 1 tsp. of cumin
- Shredded cheese (optional)

Start by cooking 2 cups of jasmine rice according to the packaging. You can substitute the jasmine rice with brown rice if desired. While the rice is cooking begin chopping up the vegetables. Dice 1 red bell pepper and 1/4 of a yellow onion. After dicing the vegetables set them aside for now. Then chop up the 5 links of chicken sausage while the rice is finishing cooking. Be sure to remove the rice from the heat once it has finished cooking.
Place a medium sized skillet on the stove top over medium heat. Coat the skillet with 1 tbsp. of avocado oil or a oil of your choosing. Set the diced red bell pepper, yellow onion, and chopped chicken sausage into the skillet. Cook the vegetables and chicken sausage in the skillet for approximately 5-10 minutes. After they are mostly done cooking add the two cups of jasmine rice into the skillet. Add 3 tbsp. of tomato sauce, 1 tsp. of ground pepper, 1 tsp. of parsley, and 1 tsp. of cumin into the skillet. Mix everything together in the skillet. Allow all the mixed ingredients to cook in the skillet over medium heat for 3-5 minutes. Serve into a bowl and top with a little cheese if desired.
This simple dish can easily be served on its own or with a side of vegetables. It also makes a great meal to meal prep for lunches or even to make a little extra for leftovers. I love the simplicity and easy preparation of this recipe.
