Shrimp Avocado Salad

This recipe includes two of my favorite things: shrimp and avocado. You can never go wrong with seafood and avocado in my opinion. I love how easy this Shrimp Avocado Salad is to make a delicious dinner during the week. It’s also pretty light and refreshing making it perfect for the summer. The Shrimp Avocado Salad would be a great addition to a weekend on the beach or by the pool.

Ingredients you will need:

  • 1 lb of peeled and de-veined shrimp
  • 1 cucumber
  • 1/2 white onion
  • 2 limes
  • 1 avocado
  • 2 sweet potatoes
  • 1 tsp. of chopped cilantro

This salad includes shrimp, cucumber, cilantro, avocado, lime juice, white onion, and sweet potatoes. To make it start by simply boiling a pound of peeled and de-veined shrimp. If the tails are on the shrimp you can remove them before or after you boil them. While the shrimp is cooking dice cucumber, avocado, and a white onion. The sweet potatoes can be diced and mixed into the salad or they can be cut thin and roasted as chips for dipping.

If you wish to dice the sweet potato to toss in then cook them on a pan for about 10 minutes before adding them to the salad. Place the diced cucumber, avocado, white onion and cooked sweet potato (if desired) into a medium sized bowl. Then cut two limes in half and squeeze as much lime juice as possible into the medium bowl. Finely chop the cilantro and add about 1 tsp. of cilantro to the medium mixing bowl. Once the shrimp are fully cooked remove them from the boiling water. Chop the shrimp into smaller pieces and then add the shrimp to the medium mixing bowl. Stir everything in the bowl together and allow the salad to cool in the fridge for about 30 minutes.

If you choose to add the diced sweet potatoes to the salad then it is ready to enjoy after cooling in the fridge. If you prefer to make sweet potato chips then coat a baking sheet with coconut oil. Preheat the oven to 400 degrees. Thinly slice two sweet potatoes to create thin slices of sweet potato. You can also us a potato peeler to achieve the thin slices. Once they’re all sliced lay them onto the baking sheet and place into the oven for about 20-30 minutes until they become crisp. After they are done remove from the oven and serve with the shrimp avocado salad.

Shrimp Avocado Salad

This light and refreshing shrimp avocado salad is perfect for a light dinner during the week or refreshing snack by the pool during the summer. It combines shrimp, cucumber, avocado and white onions to make a refreshing salad.

Ingredients
  

  • 1 lb shrimp peeled and de-veined
  • 1 cucumber
  • 1/2 white onion
  • 2 limes
  • 1 avocado
  • 2 sweet potatoes
  • 1 tsp. chopped cilantro

Instructions
 

  • Start by peeling and de-veining the shrimp if not already done. Also be sure to remove the tails from the shrimp too.
  • Boil a pound of peeled and de-veined shrimp.
  • While the shrimp is cooking dice the cucumber, avocado and 1/2 white onion.
  • The sweet potatoes can be diced and mixed into the salad or they can be cut thin and roasted as chips for scooping the shrimp avocado salad.
    *If you wish to roast them see above for directions*
  • Peel and dice the 2 sweet potatoes. Then coat a pan with some avocado oil or oil of your choice and cook the diced sweet potatoes for about 10 minutes or until tender. Once they are done cooking remove from heat.
  • Place the diced cucumber, avocado, white onion, and cooked sweet potato into a medium sized bowl.
  • Cut the 2 limes in half and squeeze as much lime juice as possible into the medium sized bowl.
  • Finely chop the cilantro and add 1 tsp. of chopped cilantro to the medium mixing bowl.
  • Once the shrimp are fully cooked remove them from the boiling water. Chop the shrimp into smaller pieces and then add the shrimp to the medium mixing bowl.
  • Stir everything in the bowl together and all the salad to cool in the fridge for about 30 minutes. Then serve and enjoy.
