Shrimp Mango Salad

Ingredients you’ll need for the Shrimp Mango Salad:

  • 1 lb. of cooked shrimp
  • 1 chopped cucumber
  • 2 limes
  • 1 diced mango
  • 1 tbsp. of diced cilantro

This recipe is incredibly easy to make. Purchase shrimp that is already peeled, de-veined, and cooked for the quickest prep time. If the shrimp is not cooked then begin by boiling it. The shrimp should be peeled, de-veined, and the tails are removed prior to cooking. Even cocktail shrimp would work once you remove the tail. Dice the cooked shrimp and place them into a medium sized mixing bowl.

Next, chop one cucumber into small pieces and dice one mango. Place the cucumber and mango into the mixing bowl once they are all diced. Then, chop 1 tbsp. of cilantro finely and toss into the mixing bowl. Lastly, cut 2 limes in half and squeeze as much lime juice as possible over the mixing bowl from each half. Mix everything together well. The shrimp mango salad can be served over a bed of rice, with chips, crackers, or on its own.

  • Cut 2 limes in half and squeeze as much lime juice as possible over the mixing bowl from each half.

  • Serve by itself, over a bed of rice, with chips, or even crackers.
