I love when I’m able to find a great dairy-free alternative to a dish you might think wouldn’t be able to be made dairy-free. This tortellini was filled with a dairy-free cheese but still had all the great flavor of tortellini. The best part is it was very easy to make! This simple dairy-free shrimp tortellini includes dairy-free tortellini, shrimp, and broccoli all topped with a delicious lemon garlic butter sauce.
Ingredients You’ll Need to Make this Shrimp Tortellini
- 1 package of dairy-free tortellini
- 1 cup of fresh or frozen shrimp (peeled, deveined, and tail-off)
- 2 cups of broccoli florets (microwavable bag)
- 2 tbsp. of butter (dairy-free)
- 1 1/2 lemons
- 1 tsp. of minced garlic
How to Make this Shrimp Tortellini Recipe
To make this shrimp tortellini recipe start by unthawing the shrimp if you are using frozen shrimp. Next, begin chopping up the broccoli, if it is not already, into small florets. Either microwave, steam, or cook the broccoli in the oven depending on the type of broccoli purchased. For the quickest option go with broccoli florets in a microwavable bag.
Begin boiling 2 pots of water. Once the water has reached a boil place the tortellini in one pot of boiling water and the shrimp in the other pot of boiling water. While the tortellini and shrimp are cooking begin microwaving the bag of broccoli. Once the shrimp and tortellini are fully cooked remove from heat and strain the water out of each pot. Add the shrimp and cooked broccoli florets into the pot with the tortellini and place over low heat. Add in 2 tbsp. of butter (use dairy-free to keep the whole meal dairy-free) and 1 tsp. of minced garlic. Using a citrus squeezer juice 1 1/2 lemons over the pot of shrimp tortellini. Mix everything together well until all the butter has melted and the lemon garlic butter sauce is coating the whole dish. Remove from the heat, serve, and enjoy!
