Simple Egg Roll in a Bowl

It takes a spin off the classic egg roll to eliminate the fried food and include whole ingredients. The recipe is primarily ground turkey and coleslaw sautéed and seasoned to get this flavorful dinner.

Ingredients you’ll need:
- 1 lb. of ground turkey breast
- 16 ounces of coleslaw
- 2 eggs
- 1/4 cup of no soy teriyaki sauce (can substitute with soy sauce if desired)
- 1 tbsp. of ground ginger
- 1 tbsp. of garlic powder
- 1 tsp. of ground pepper
- Sesame seeds – optional
Place a large pan on the stove over medium heat and add the 1 lb. of ground turkey. Secondly, using a spatula break up the ground turkey and cook it until it is brown. After that add 16 ounces of coleslaw to the pan. The coleslaw can be gradually added to the pan, if needed, depending on how large the pan is. The coleslaw will cook down, so you can continue to add in coleslaw as some of it cooks down if needed. Mix the ground turkey and coleslaw together allowing the coleslaw to saute in the pan.
Next, add 1/4 cup of teriyaki sauce to the pan and mix together. In a bowl, crack two eggs and whisk the eggs until the yolks and egg white become fully mixed. Pour the whisked egg in the pan with the ground turkey and coleslaw mixture. Quickly mix the egg into the ground turkey and coleslaw mixture allowing the egg to coat the pieces of ground turkey and coleslaw. Allow this mixture to continue cooking and add 1 tbsp. of ground ginger, 1 tbsp. of garlic powder, and 1 tsp. of ground pepper. Lastly continue cooking the mixture until the coleslaw is fully cooked down. Remove the pan from the heat and serve into a bowl. Top the egg roll in a bowl with sesame seeds if desired, serve, and enjoy!
