The cooler weather has arrived and nothing is better then a big warm bowl of soup on a cold evening. This turkey tortilla soup might just be a new favorite of mine! It’s easy to make and delicious. This recipe also stored well for me to reheat for lunch the next day. I love recipes that are great for dinner and a little meal prep. The turkey tortilla soup starts with a beef bone broth base and includes ground turkey breast, black beans, corn, and onions topped with tortilla chips!
Ingredients You’ll Need to Make this Turkey Tortilla Soup
- 1 lb. of ground turkey breast
- 32 ounces of beef bone broth
- 1 can of black beans
- 1 cup of white corn
- 1/4 of a diced white onion
- 4 tbsp cumin
- 2 tbsp Italian seasoning
- 1 tbsp garlic powder
- 1 tbsp onion powder
- tortilla chips
How to Make Turkey Tortilla Soup
To make this recipe start by placing the 1 lb. of ground turkey breast into a large pot over medium heat. Use a spatula to break up the ground turkey as it cooks. Once the ground turkey has fully cooked add the 32 ounces of beef bone broth, 1 can of black beans, 1 cup of white corn, and 1/4 of a diced white onion. I personally prefer to drain the black beans prior to adding them to the soup, but either works. Stir everything together and then add in the 4 tbsp of cumin, 2 tbsp of Italian seasoning, 1 tbsp of garlic powder, and 1 tbsp of onion powder. Mix everything together well and allow the soup to simmer for about 30 minutes. Once the soup is done simmering, serve with a few crushed tortilla chips on top, and enjoy!
