Shrimp Mango Salad
Refreshing shrimp mango salad with shrimp, cucumber, mangos, lime juice and cilantro. This makes a tasty appetizer or dinner over nachos.
- 1 lb. cooked shrimp
- 1 cucumber
- 2 limes
- 1 mango
- 1 tbsp cilantro
If the shrimp is not already cooked, peeled, and de-veined then begin by cooking the shrimp.
Dice the cooked shrimp and place them into a medium sized mixing bowl.
Chop one cucumber into small pieces and dice one mango. Place the cucumber and mango into the mixing bowl once they are all diced. Then chop 1 tbsp. of cilantro finely and toss into the mixing bowl.
Cut 2 limes in half and squeeze as much lime juice as possible over the mixing bowl from each half.
Mix everything together well.
Serve by itself, over a bed of rice, with chips, or even crackers.
