Simple Egg Roll in a Bowl

This delicious easy dinner takes a spin off the classic egg roll to eliminate the fried food and include whole ingredients.

  • 1 lb ground turkey breast
  • 16 ounces coleslaw
  • 2 eggs
  • 1/4 cup No soy teriyaki sauce Can substitute with soy sauce if desired
  • 1 tbsp ground ginger
  • 1 tbsp garlic powder
  • 1 tsp ground pepper


  • In a large pan begin cooking 1 lb. of ground turkey breast over medium heat. Using a spatula break up the ground turkey and cook it until it is brown.
  • After that add 16 ounces of coleslaw to the pan. Begin cooking down the coleslaw. Mix the ground turkey and coleslaw together allowing the coleslaw to sauté in the pan.
  • Next, add 1/4 cup of teriyaki sauce to the pan and mix together.
  • In a bowl, crack two eggs and whisk the eggs until the yolks and egg white become fully mixed.
  • Pour the whisked egg in the pan with the ground turkey and coleslaw mixture. Quickly mix the egg into the ground turkey and coleslaw allowing the egg to coat the pieces of ground turkey and coleslaw.
  • Allow this mixture to continue cooking and add 1 tbsp. of ground ginger, 1 tbsp. of garlic powder, and 1 tsp. of ground pepper.
  • Continue cooking the mixture until the coleslaw is fully cooked down.
  • Remove the pan from the heat and serve into a bowl.
