Preheat the oven to 350 degrees.
In a medium sized mixing bowl, combine 2 bananas, 1 1 /2 cups of shredded coconut, 1/2 cup of honey granola, and 1/4 cup of chopped walnuts.
Start mixing all the ingredients in the bowl together by mashing the bananas and mixing the ingredients well.
Line a baking sheet with a piece of parchment paper.
Next, coat the baking sheet with 1 tsp. of coconut oil or oil of your choosing.
Using a spoon, scoop the banana coconut cookie dough onto the baking sheet to form one inch balls.
Press the balls of dough down flat onto the cookie sheet and place them into the oven.
Bake the cookies for approximately 15-18 minutes until the coconut becomes golden brown.
Optional: Set 2-3 chocolate chips into each cookie right after they are out of the oven if desired. Serve the cookies or store them for later.
