Green Goddess Pasta Salad
This pasta salad uses Trader Joe's green goddess dressing, which is basically avocados, green onions, lemon juice, chives, basil, and garlic. You can easily use another dressing of choice, balasmic, or Italian dressing. The green goddess pasta salad includes chicken breast, shredded carrots, diced cucumbers, brown rice pasta, and green goddess dressing.
- 2 cups brown rice
- 1 lb chicken breast
- 1 cup shredded carrots
- 1-2 cucumbers diced
- 1 bottle green goddess dressing
- 1 tsp garlic powder
Begin by boiling water in a medium sized saucepan over medium heat.
Once the water comes to a boil add in 2 cup of brown rice pasta.
While the pasta is cooking start cooking the chicken breast. Put the 1 lb. of chicken breast into an oven safe pan. Season the chicken breast with 1 tsp. of garlic powder. Then place the chicken breast into the oven at 350 degrees for about 20-30 minutes or until fully cooked.
Once the pasta and chicken are fully cooked remove both from the oven/heat.
Dice the 1-2 cucumbers. Place the 1 cup of shredded carrots and 1-2 diced cucumbers into a large bowl.
Strain all the water and rinse the pasta. Once all the water is out from the pasta pour the brown rice pasta into the bowl with the cucumbers and carrots.
Next, place the chicken breast into a separate bowl. Begin shredding the chicken breast in the separate bowl. I typically do this by just using 2 forks and pulling the chicken breasts apart until all of it is shredded.
Once all the chicken is shredded add the chicken into the bowl with the brown rice pasta, cucumbers, and shredded carrots.
Lastly, pour about 3/4 a bottle of Trader Joe's green goddess dressing into the bowl. If you are using a different dressing this will be about 8 ounces of dressing.
Once the dressing is in the bowl stir everything together well, serve, and enjoy!
